Unpasteurized milk may contain several human pathogens including but not limited to: Listeria monocytogenes, Salmonella spp., E. Coli O157:H7, Yersinia enterocolita, Campylobacter jejuni and Staphylococcus aureus which in high enough quantities produces a toxin that results in food poisoning. Pregnant women, children, the elderly and immune compromised individuals are most susceptible to contracting an illness through the consumption of unpasteurized milk.
The Connecticut Department of Agriculture, Connecticut Department of Public Health, Federal Food and Drug Administration, and other public health authorities such as the American Medical Association, the American Academy of Pediatrics, the National Conference on Interstate Milk Shipments, the National Association of State Departments of Agriculture, the Association of Food and Drug Officials, and National Association of State Public Health Veterinarians advise consumers not to consume unpasteurized milk because of the health risks.
